Oatmeal Pie

"A recipe shared by Jan Garrabrandt of The Artist's Inn and Gallery in Terre Hill, Pennsylvania, this oatmeal pie is a little different from many in that it includes both coconut and pecans... not one or the other. I haven't tried it yet, but it looks so good and simple I know I'll be making it soon."

  • Mix all ingredients and pour into unbaked pie shell.
  • Bake at 350 degrees until toothpick comes out clean (approximately 45 minutes).

  1. Turned out great! This was a great dessert. DH usually isn't into anything that hints of healthy (the oats) but even he said he would eat it again. This was a great combination of flavors and definitely had a hint of that PA Dutch quality. I will probably make this again! Thanks for posting!
     
  2. DH and I disagreed on how many stars, I said four, he said five. He won ;). Very nice flavor and delicious with whipped cream or vanilla ice cream. I longed for a bit more moistness, maybe a bit of molasses will get added next time. I think you could cut the brown sugar back to 3/4 cup and still make a tasty pie. Thanks!
