- 1 teaspoon butter-flavored cooking spray
- 2 cups old fashioned oats
- 1 1⁄2 cups white whole wheat flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1⁄2 teaspoon salt
- 2⁄3 cup raisins, seedless
- 1 egg (large)
- 3 tablespoons canola oil
- 3⁄4 cup unsweetened applesauce
- 1 1⁄2 teaspoons vanilla extract
- 1⁄3 cup brown sugar
- 1⁄3 cup Splenda sugar substitute

- Preheat oven to 350 degrees F. Lightly spray a cookie sheet with cooking spray.
- In a large bowl, combine flour, baking soda, oats, cinnamon, salt, and nutmeg. Toss with raisins.
- In a medium bowl, cream together egg, applesauce, canola oil, vanilla, and the sugars. Whisk to blend thoroughly.
- Fold egg-sugar mixture into flour-oat mixture, 1/3 at a time, mixing well.
- Drop by the tablespoonful onto prepared cookie sheet, about 2 inches apart.
- Bake for 12 to 15 minutes until golden brown.
- Using a metal spatula, transfer cookies to a cooling rack.
- When cool, store in an airtight container.
