ingredients
- 1 (8 ounce) can crushed pineapple
- 1 cup sour cream
- 1 egg
- 1⁄4 cup butter, melted
- 1 1⁄2 cups all-purpose flour
- 1 cup old fashioned oats or 1 cup quick oats
- 1⁄2 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon salt
- 1 cup raisins
directions
- In a small bowl, combine undrained pineapple, sour cream, egg and butter until blended.
- In large bowl, combine remaining ingredients.
- Make a well in the center.
- Pour in pineapple mixture.
- Stir until just mixed.
- Spoon into greased 2 1/2 inch muffin cups.
- Bake in 350 deg F oven for 30-35 minutes until lightly browned and a wooden toothpick inserted in center comes out clean.
- Serve warm.

This is a great recipe! I substituted one finely chopped apple and 1/4 cup milk for the pineapple chunks and it really tastes great :)
