  • Saute onion, mushrooms& garlic in a bit of the broth, about 5 minutes.
  • Stir in oats, broth, tomatoes& tomato sauce.
  • Bring to a boil.
  • Reduce heat and simmer 5 minutes.
  • Season and stir in milk.

  1. Wow this was wonderful. I did make some changes for myself, and still came out with a wonderful, hearty, creamy, deliscious, low cal meal. I added veggie italian sausage that i had browned before the onions, I did not have tomato sauce so used salsa as recommended earlier, and used 2 T miso + H2O instead of broth.
     
  2. This is a very nice meal and a great way to use oatmeal! I've made it a few times and you can just experiment with the vegetables and change the taste of the soup by doing so, so you won't easily get bored with it. And also I find this a very soothing meal for your bowels, if you've eaten something that was spoiled or if you have a (stomach) flue etc, give this meal a try.
     
  3. For being both low-fat and low calorie, this is exceptionally good. Since I didn't have any tomato sauce, I use ketchup instead and it worked great.It's very filling, too, and uses that healthful oatmeal in a new way.
