Oatmeal Waffles

10 Small waffles or 5 large ones

ingredients
- 2⁄3 cup coconut flour
- 1⁄3 cup whole wheat flour
- 2⁄3 cup rolled oats
- 2 teaspoons baking powder
- 1⁄2 teaspoon cinnamon
- 1⁄8 teaspoon salt
- 1 tablespoon brown sugar
- 1 egg
- 1 egg white
- 2 tablespoons butter
- 1⁄2 teaspoon vanilla
- 2⁄3 cup skim milk
- 1⁄3 cup eggnog
directions
- Melt butter, set aside so it cools a little.
- In large mixing bowl, mix dry ingredients.
- Set aside.
- In small mixing bowl whisk eggs, milk, nog, and vanilla.
- Mix in melted butter quickly.
- Add to dry mixture.
- Add a little more skim milk if batter is too thick.
- Using directions on waffle maker, make waffles!
