Old-Fashioned Pineapple Cookies
"I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this."

- 1⁄2 cup shortening
- 1⁄2 cup brown sugar
- 1⁄2 cup white sugar
- 1 egg, beaten
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1 cup crushed pineapple, drained
- 2⁄3 cup chopped walnuts
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon vanilla
directions
- Preheat oven to 350.
- Cream shortening and sugars together.
- Add egg and mix well.
- Add dry ingredients and mix well Add drained pineapple and mix well.
- Add nuts and flavoring, mix well (yes, again).
- Drop by spoonful onto greased baking sheet.
- Bake for 15-20 minutes.

When I was small, many many years ago, my Grandma A used to make me pineapple cookies. I loved them. These are really close if I leave out the walnuts. Thank you so much for bringing back some very warm memories. -
I really like these cookies. They're soft, moist and mildly flavored. They also freeze well. I had to use butter in place of the shortening, but they still turned out fantastic. This ones a keeper. -
These are so good, kathie! I had a couple of cans of pineapple that I needed to get rid of so I made a double batch. Since I also had a bit of unsweetened coconut to use up, I toasted 1/2 cup coconut to throw in one of the batches, with the walnut/vanilla step. The Beau, aka Mr. Picky Eater, has been gobbling these up too! Thank you!
