  • Preheat oven to 300°F.
  • Grease a 2-quart casserole dish.
  • Beat eggs and add milk.
  • Stir in sugar, uncooked rice, butter, vanilla essence, raisins and nutmeg.
  • Pour into the prepared pan.
  • Bake uncovered for 2 1/2 hours and make sure to stir frequently during the first hour.
  • Serve warm/cold as per your choice.

  1. Didn't like it as well as rice puddings made in a saucepan--not as creamy--as the pudding part tends to separate when it is not cooked while stirring constantly. I did stir frequently during first hour--which is rather a pain with something in oven--and it still separated.
     
  2. My wife and I both missed rice pudding, and the recipes we tried weren't quite what we were looking for. After trying this one, we both agree this is the best. I am compiling a list of recipes for our daughter, recently married and attending college. I am looking for recipes that are simple to follow for a novice cook, that still deliver great taste.   4. my friend cooked this recipe on the stove in a large pot... then put it in a cassarole dish and let it sit to room temperature... it was... as she says... "devine"!!!<br/>thank you !!!
     
  5. This was easy to make; and I enjoyed the flavor the nutmeg gave this dish. I put this in my cookpot to do the baking. I should have butter the crock first as it did get a bit brown around the edges. I'll just have to watch it closer next time.
