directions

  • Dissolve yeast in water, add honey and let stand until it bubbles, approx 5 to 10 minutes.
  • Add salt and oil to yeast mixture, then add flour a little at time until you have a stiff dough.
  • Turn dough out on a floured surface and mold into a ball shape. Place in pan and cover; let rise for about an hour.
  • Punch down the ball of dough and mold it into a loaf shape to fit you bread pan. Cover with a towel and let raise again until it doubled in size.
  • Bake in a preheated oven at 350°F for about 45 minutes. Bread is done when it is golden brown and sounds hollow when thumped.

Questions & Replies

  1. What is the weights of the AP flour in grams? There seems to be a huge divide between different sources. Some like King Arthur say 120 grams per cup. Others say 146. 480 grams is not enough for this recipe.

  2. Can someone please tell me if the flour is all purpose or self rising?

  3. My husband likes real yeasty tasting bread. How would I get that strong yeast flavor? Could I just add more yeast? Reneemarie Schulenburg Texas

  4. So there is no kneading this bread dough?

  5. Can i double the recipe for this old fashion bread

Reviews

  1. This loaf has a very fine crumb, rose nice and high and lovely texture. The flavour is wonderful...but for our taste I would increase the salt by 1/4 tsp...Overall a great bread...can't wait to toast it. Thank you for sharing.

  2. This is a wonderful recipe!..Turns out just like my mothers...loved it!..Thanks for sharing.

  3. This was a delicious loaf of bread. And it did remind me of Grandma and the big bread bakery in our area growing up, as the aroma went through the house. We sliced it while still warm with a little butter and YUM! I uploaded a photo to show you. Happy New Year 2011~!

  4. I'd been looking for a recipe similar to the one my mother used to make. This one seemed very close so I used it to make rolls for our Thanksgiving dinner. It was very easy to prepare and rose beautifully. The rolls turned out nicely but next time I'll add more salt and probably a little more sugar as well. Thanks for giving me a recipe to use that is so close to the one mother made for years.

  5. Out of all the breads I have tasted, this one was the most superb! It will be my bread recipe from here on in! It was quick, easy, rose nicely, the crust was thin but crunchy, the interior was tasty and fluffy. Perfect! Thank you for sharing!

Tweaks

  1. I added a half a cup of milk, used margarine instead of oil, and added a bit of extra flour and salt. Turned out amazing

  2. if this was truely an old time bread recipe; it would call for lard, cake yeast..... this is not a true old time recipe for bread

  3. I used half honey and half sugar, half milk instead of water. added more flour, kneaded 1/2 by hand until the ball formed. and tripled the recipe. It yielded 2 loaves of delicious bread and a dozen large fried bread which in Utah we call a scone. Served with honey butter and it was delicious! Thanks oh I oiled bread pan and bread to brown crust...
