- 1⁄2 teaspoon sea salt
- 1⁄2 teaspoon garlic powder
- 1⁄4 teaspoon ground coriander
- 1⁄4 teaspoon paprika (I like smoked paprika)
- 1⁄4 teaspoon ground cumin
- 1 cup whole wheat flour (or all purpose flour)
- 1 1⁄2 tablespoons whole wheat flour (or all purpose flour)
- 2 teaspoons sugar (or honey)
- 1 teaspoon sea salt
- 1⁄4 teaspoon fresh ground pepper
- 10 kalamata olives, pitted and chopped
- 1 tablespoon olive oil
- 1⁄2 cup water
directions
- Make the spice mixture by combining all the seasonings (first 5 ingredients) in a small bowl. Set aside.
- Put the flour, sugar, salt, pepper, ad olives in a large mixing bowl and stir to combine.
- Add the olive oil and stir vigorously with a fork.
- Add water and cont. to stir until a ball forms.
- Sprinkle work surface liberally with flour and turn the dough out onto the surface. Knead about 2 minutes.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 400°F.
- Remove the dough form fridge and flatten into a disk on a floured surface.
- Roll the dough out as thinly as possible. Transfer to baking sheet that has been brushed with olive oil.
- Brush the dough with olive oil and sprinkle spice mixture on top.
- Bake about 20 minutes or until golden brown.
- This can be made a couple of days in advance. Wrap in plastic wrap and kept in a dry place. Enjoy with my Rustic Roasted Tomato Basil Soup (Recipe 368837)!
