- 4 -5 idaho potatoes
- 1⁄8 cup olive oil
- 1⁄2 tablespoon sea salt
- 1⁄2 teaspoon fresh ground black pepper

For the garlic sauce
- 2 large garlic cloves
- 2 tablespoons water
- 1⁄4 teaspoon salt
directions
- Preheat oven to 450 degrees.
- Peel and cut each potato into thick fries and place in a bowl of cold water. This will allow the potatoes to stay nice and crisp. When all potatoes are sliced, remove from water and pat dry with paper towels. Place in a bowl and toss with the olive oil and salt and pepper according to taste.The amount of salt used depends on the size of the potatoes and personal preference.
- Lay out in one layer on nonstick cookies sheets. Cook for 30 minutes, turning frequently until golden brown.
- For the garlic sauce.
- Peel and finely chopped the garlic cloves. On the cutting board season with a 1/4 tsp of salt and mash with the wide side of the knife. Once the garlic is almost a paste, place is a small bowl and add 2 tablespoons water. Mix well. This fresh garlic sauce can be used to dip the oven fries in or it can be poured over the potatoes once they are served.
