- Preheat toaster oven to 350.
- In a small bowl stir together butter, sugar, vanilla, and 1 tbsp of water with a fork till blended.
- Stir in flour (and salt and baking soda if desired.) You may need to stir in a little more water to get the correct consitency.
- Stir in additonal flavor: chocolate chips, oatmeal and cinnamon, peanut butter (reduce water,) maple flavor and white chocolate chips- the possibilities are endless!
- Drop onto a small pan and bake in your toaster for 10-15 minutes (you have to watch it carefully) till golden around the edges. If you want it chewy, eat it warm, if you want it crunchy, wait till it cools.

I just tried these cookies tonight. I quadrupled the recipe and added 1-2 tbsp cocoa powder and a few drops of mint extract. I used whole wheat flour and Splenda too. They took about 11min to cook in my toaster oven. They were good...perfect for a snack for 2. It made 12 small cookies. Thanks for an easy little snack!

Wow I loved this. I am a solo cook so this was perfect for me. This is probably common knowledge for people other than me, but make sure you use cold butter. The first time I made it, I used melted butter and it turned out like a nice litte cake (good, but not a cookie). The second time I used cold butter (well, marg) and it was a nice buttery sugar cookie. I will make this often!

Well i made this, tripled the recipe and used a mini muffin pan to bake them, so they came out like little sweet chewy centered muffins! I posted a recipe for my adaptation of Japan bound's wonderful recipe under my recipes entitled Small Batch of Chewy Mini Muffin-Cookies. Thanks for such a great recipe!!
