One-Dish Kielbasa, Green Beans & Potatoes

"This is a quick and easy one-dish meal that I concocted one hectic Christmas shopping/baking season when it seemed we were eating takeout all the time. My kids loved it and I've been making it ever since. I only listed this as 4 servings because everyone usually has seconds."

  • Cut kielbasa into 1" chunks and place in Dutch oven or large pan.
  • Add enough water to completely cover the meat and cook on high till it comes to a boil.
  • Meanwhile, peel potatoes and the onion, and cut into eighths; drain the green beans.
  • Let kielbasa boil for 2 minutes to extract the grease.
  • Lower the heat and skim off all grease and foam; discard.
  • Turn heat to high again and add vegetables, chicken broth and seasonings to pot; stir to combine.
  • If necessary, add enough water to bring the liquid level to about 1" below top of the ingredients.
  • Bring to a boil; lower heat to simmer and cover.
  • Cook for 20 minutes.
  • Serve in soup bowls with crusty bread, which is delicious dipped into the broth.
  • NOTE: If frozen green beans are used, put them in with the kielbasa to cook for 7 extra minutes before adding the potatoes and onion; then cook for 20 more minutes.

  1. I browned the onions and kielbasa with 3 cloves of garlic and did not add any water. I just added the potatoes and chicken broth and simmered. I added quite a bit of season salt and dried chives for a little bit more flavor. I simmered it too long, but found that I actually like the way the over cooked potatoes thickened the liquid. It was quick and easy and everyone loved it. Will definitely make again!
     
  2. I make a very similar dish, only without the broth, I just use a little of the liquid one of the cans of green beans. Also, I use turkey smoked sausage, that way I don't have to drain the grease. saves a step, healthier, and tastes great. This dish works well in the crockpot too.
     
  3. Very tasty and easy. I used canned green beans (using the liquid from one can). I used seasoned salt and a few shakes of garlic powder. I used red potatoes so I didn't have to peel (yay!). I also cooked this until the potatoes were soft enough to thicken the liquid some. I didn't use chicken broth; I just threw a chicken bouillon cube into the water as it cooked.

  5. This was easy to make and whole family liked. even the kids ate it without complaint. Good flavor with a stewlike consistancy, I also cooked it until the pototoes started to fall apart. served it with fresh bread from the bread machine. Perfect for dipping.
