One Loaf White Bread

- Mix the butter, sugar, and salt into the warm water.
- Stir in 1 tablespoon flour and the yeast (Can use 1 Tablespoon yeast in place of the packet).
- Wait 5 minutes; if yeast does not bubble buy new yeast.
- Put flour in a large bowl; stir in yeast mix.
- Stir thoroughly; turn onto a floured board and knead.
- Knead in as much of the flour as possible to make a satiny dough; if dough is sticky add more flour a tablespoon at a time.
- Put dough in a greased bowl and turn to coat.
- Cover with a clean damp towel and let rise til double.
- Punch down; shape into loaf and put in greased loaf pan.
- Let rise.
- Bake at 375 for 50 minutes or until bottom sounds hollow when thumped.
- Can also be shaped into 12 dinner rolls or 8 hamburger buns.
- Bake for less time if using these shapes.

This was a slightly sweet, moist, tasty bread. I took the warm water and dissolved the yeast and proofed it for about 5 minutes. Meanwhile, I put butter, not margarine, sugar and the salt in a mixing bowl. After the yeast was foamy, I added it to the mixing bowl and gradually added a cup at a time the flour and kneaded it in my KitchenAid mixer till smooth and elasticy. I put it in a greased bowl with a damp cloth and let it rise until doubled, turned it onto a floured cloth, rolled it out to a rectangle, folded it and placed it in a loaf pan and let it rise again and then baked it at 350 for 30 minutes. Wonderful bread!

This was a god send when trying to figure out a single loaf and I didn't have money to go to the store. As a single mom, I don't need 2 loaves of anything! I have made the recipie as is and it was a good bread, with a very forgiving dough. I have also made it subbing water and milk, adding honey (fun discovery was that it extended the shelf life!) I've moved to buying the jars of yeast. So much cheaper! My son loves it, has helped make it, and now people ask me to bring it to events! My technique has changed and someone left a comment that bothered me. So heres what ive learned over the last year or so, I measure in a Pyrex 1 cup. Fill to 1 cup line the liquid, add butter. Microwave for 1 min. Add butter (it melts) and then sweetener. Then I fill to the bottom of the word "pyrex" additional milk from fridge & mix. (the temp is close enough) Then add enough yeast to have a single layer across the top and stir. (It will bubble a little)while that's sitting I then move on to flours etc... I generally add a little more yeast to the flours too. . be careful when using wheat flours as its molecular structure will cut the gluten strands, so knead less. If you're adding stuff to the bread, do so after the first rise, when you shape your loaf. Still in West Virginia but we've moved a few miles away, down to the county capitol. It's a compromise: bigger than our last town but smalelr than the "big city" of Cumberland MD, right up the road.
