  1. Preheat oven to 250 degrees.
  2. Place the beef bones on bottom, with beans and onion.
  3. Season with part of the salt and pepper.
  4. Next cover with the potaoes, carrots, ketchup, and flour.
  5. Place short ribs, and beef shanks on top.
  6. Season with the last of the salt and pepper.
  7. Add water to cover the meat entirely.
  8. Cover with lid and then with foil.
  9. Must be covered tightly.
  10. Place in oven at 250 degrees F.
  11. Cook-- Braise for 12 hours or longer.
  12. Serve in large soup bowls.
  13. Garnish with fresh chopped parsley.
  14. Eat with nice homemade cheese biscuit or polenta, or grits--.
