One-skillet Spanish Rice Meal

- 2 tablespoons butter
- 1 small onion, chopped
- 1 lb ground turkey or 1 lb ground beef
- 1 (10 3/4 ounce) can condensed tomato soup
- 3 cups cooked rice
- 1 cup medium salsa (adjust to taste)
- 1 cup whole kernel corn (I use canned, but fresh or frozen works too)
- 1 (15 1/4 ounce) can kidney beans
- 1 pinch ground cumin
- chili powder
directions
- Melt butter in a large skillet over medium-low heat.
- Cook onion in butter until tender, 5-7 minutes.
- Add turkey and brown well.
- Mix in soup concentrate, rice, salsa, corn, beans, cumin and chili powder, cover and heat through.
- Serve hot.
