Onion and Herring Sandwich - Smorrebrod

"From http://friendsofdenmark.org. Posted for ZWT6. To make smorrebrod, cut crusts from slices of pumpernickel or rye bread, but not French bread, when using them for a base. Be careful to spread soft butter entirely over the piece of bread you use. This keeps moist ingredients from seeping through and making the bread soggy. Ingredients should be artfully arranged. Sandwith will be eaten with a knife and fork."

  • Spread 1 teaspoon butter on each slice of bread, being sure to cover each completely.
  • Cut each buttered slice in half crosswise or into 2 (4-by-2-inch) pieces.
  • Top each piece of bread with one-eighth of the herring, placing the fish smooth-side up.
  • Top each with several onion rings and 1 tomato wedge.
  • Garnish with watercress or parsley.

  1. Made for the Goddesses of ZWT-9 & because I've loved herring since my childhood. DH is gone on a weekend fishing trip, so I scaled this lovely sammie down to a single serving for my lunch today. Altho made as written, I did alter the presentation slightly. I wanted my tomato on the bottom & the herring where it could be seen. I also used a spec Icelandic bread made for this type sandwich & others like it (Rugkjarnabraud), so what you see in the pic is as authentic as it gets & the taste as good as it gets as well. Thx for sharing this recipe w/us.
     
  2. I really enjoyed this. I wasn't sure about the herring. But when topped with a fresh tomato slice and sweet onion rings, I thought it made for a really nice sandwhich.   3. There are so many wonderful reviews for this recipe that mine is due to personal taste. I do like herring, but I wasn't crazy about this flavor profile. It may be the type of herring in marinade that I bought. It does look beautiful and makes for a pretty presentation! Thank you.
     
  4. This is a delicious sandwich! I used a soft deli pumpernickel, which I cut out into rounds and slathered LOTS of butter on! The herring was rich and creamy - so fatty! So delicious... I think it helped that we had a beautifully ripe homegrown tomato that was full of flavor as well, and used red onion out of personal taste. Used a lemon to squeeze over the fish, which gave it a huge pop of flavor and contrast! Like another reviewer, I chose to put the tomato slice on the bottom, so I could see the beautiful herring! Thanks for posting a keeper of a recipe! Made for CQ4.
