Onion and Sweet Potato Burrito

"I created this when I had some leftover onion and sweet potato frozen in the freezer and wanted to create something unique. I also may have added mushrooms if I had them on hand."

  • First, cut up onion and potato into bite size pieces, then heat up olive oil in a fry pan, add in the garlic, onion, sweet potato, salt and pepper to taste. Cook until everything is soft.
  • Next prepare your tortillas, and put half of each onion, sweet potato, garlic mixture on each.
  • After that dice up your basil and green onion, and put half of that on each.
  • Sprinkle the romano cheese ontop of that, then add the mexican cheese and the Salsa on top of that.
  • Fold up and enjoy!
