- 2 cups onions, finely chopped in food processor
- 2 teaspoons salt
- 3 cups boiling water
- 2 cups milk
- 2 tablespoons butter, softened
- 2 tablespoons flour
- fresh ground pepper
directions
- Boil onions in salted water for 30 minutes. Remove from heat, add milk, and return almost to boiling.
- Blend butter and flour; stir into soup; cook and stir until slightly thickened (about 5 minutes).
