Onion Dip from Scratch, Veganized!

  • In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Note: it is very important to cook the onions long enough, until they are nice and golden.
  • Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving. Taste, and add additional seasonings, if desired.

I try to eat vegan, and most of my creations are also gluten-free because my husband is Diabetic/Celiac. I don't post any recipes I have not personally tried and liked.
