Onion Frittata

  • 60 g butter (plus a little extra)
  • 4 large thinly sliced onions
  • 6 eggs
  • 2 garlic cloves, crushed
  • salt & freshly ground black pepper
  • 1 chili, finely diced (optional)

directions

  • Put the butter, garlic, diced chili and onions in a frying pan and fry gently until the onions are a nice golden brown.
  • Beat the six eggs well with the salt and pepper.
  • Scoop the onions out of the pan and mix with the eggs.
  • Melt the extra butter in the pan and pour in the egg mixture.
  • Cook on both sides until browned Slice in wedges and serve hot.

  1. Inions - my favourite - combined with eggs. So easy to make, and a side dish (or breakfast) that quick and easy to make. Served this as a side dish to Roast chicken, and ran out very quickly as everyone came back for seconds, then complained when there were no thirds. Ah well, back to the stove for more.
     
  2. Not amazing but good. I finished mine under the broiler. I like it getting crispy on top. I also included chopped up bagels in the egg mixture.
     
  3. This was selected for *FUN FOOD FOTO EVENT- "O"* in the Photo Forum. I had Vadilla onions that had been prepared using recipe #24750 and were in the freezer. They were defrosted overnight and used to make this wonderful frittata for brunch. Served it with grilled sausages and homemade biscuits. The sweet from the onions along with the heat from the chili is a wonderful combination. Definitely a winning recipe.
     
  4. This was so good - served with breakfast sausages on a Sunday morning! I'm not very good at "flipping", so I cooked it this way: I put about a tablespoon of water into a lid that would fit the skillet tightly and "steamed" the mixture. When fairly cooked, I placed under the broiler just to finish off the top. Thanx Julie!

On my to do list is learning to quilt,knit fair isle and bottle preserves properly! I live at the Coast and have done so for the last 5 years,its certainly a slower pace of life here than when we lived in the city. There is something very restful about living so close to the Sea even the storms are spectacular to watch.One of My wishes is to spend a weekend in a Light house,preferably in rough weather! I,m also *Mum* to 4 dogs(all girls!)Millie the boxer,Jessie the cross border collie who is slightly mad to say the least!and my 2 little Jack Russells Molly and Mandy who have me running about all over the place I wish I had their energy!I,de bottle it and make a fortune!
