  • Mix dry ingredients in bowl.
  • In another bowl, beat eggs, onion, and butter.
  • Stir into dry ingredients just until moistened.
  • Fill muffin cups 3/4 full.
  • Bake at 400°F for 25 minutes.

  1. Awesome muffins. I made them per the original recipe but they came out very dense and too bland. Followed Lovey's Angel's changes and sauteed the onions in the 1/2 c. butter before adding them in. Turned out great, just adds a little depth. Thanks bunches!
     
  2. UPDATE: I made these again but this time I added 1-1/2 tsp of poultry seasoning and added 3/4 cup of buttermilk and they were WONDERFUL!! They rose up more and had more of a muffin texture this time. Thanx again MizzNezz :D Sorry, I forgot to put the starz!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
