- 1⁄4 cup butter
- 3 large onions
- 3 (10 ounce) cans beef consomme
- 1⁄2 cup red wine
- 1 cup swiss cheese or 1 cup parmesan cheese, grated
- 1 cup crouton
directions
- Melt butter and saute onions until clear.
- Add consomme' and wine.
- Pour into over safe individual bowls, sprinkle with cheese and bake in a preheated 350 degree oven for 30 minutes.
- Brown cheese by broiling.
- Add croutons before serving.

This is a great, very simple, but very tasty soup! So easy, and so smooth tasting. I followed this exactly, except for changing the serving size down to 2 servings. I cooked the onions for about 20 minutes until they were caramelized beautifully, then added the consume' and wine. I then cooked this for another 20 minutes to let flavors combine and to have a slight reduction of fluid. Put into a oven-proof soup crock and topped off with some home made sliced french bread baquette, sliced about at 1/2 inch thick and added swiss cheese (left a whole slice, and parm cheese grated on top. Let this turn a bubbly brown on top, and served with a sprig of cilantro for decoration. Lovely soup, and will make again for so many reasons, but for #1 - its GOOD!
