Open Faced Sandwich

"My mom made these quite often when I was growing up, and I continued the tradition with my son, and will with my grandson as well. I love these 'cause they have all four food groups represented in one easy and delicious sandwich. Add a cup of soup or a tossed salad for a quick supper too! You can leave the bacon off for a healthier version...but, it's just not the same!"

  • 1. Toast your choice of bread, butter it and spread a thin layer of mayo/Miracle Whip on. Putting alot of mayo on makes for a very drippy, messy sandwich.
  • 2. Place a slice of pineapple on the toast, then arrange 2 pieces of bacon on top of the pineapple. Finish with a slice of cheese. Make sure the cheese is centered over the pineapple.
  • 3. Place under the broiler just until the cheese melts. Let cool half a minute and enjoy!
