Orange and Chocolate Mini Loafs

ingredients
- 1⁄2 cup canola oil
- 3⁄4 cup sugar
- 2 eggs
- zest of two orange
- 1⁄2 cup whole wheat flour
- 1 cup all-purpose flour
- 1⁄4 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1⁄4 cup squeeze orange juice
- 3 ounces soymilk
- 1 teaspoon vanilla
- 1 cup chocolate chips
directions
- Preheat oven to 350°F Butter and flour the mini loaf pan.
- In a bowl mix oil, sugar, eggs and orange zest. Add soy milk, vanilla and orange juice.
- Add flour, baking soda, baking powder and chocolate chips. Mix well.
- Bake for 25-30 minute.
- Let cool 5-10 minutes and take mini loafs onto a wire rack for 30 minutes.

I love to cook and bake, that is why I joined this site, which by the way it is very useful. I really like the fact that most recipes contained nutrition facts. I am a registered dietitian thus I take very seriously what I eat and put into my family's mouth. Most of the recipes I try I alter to make them more nutritious and healthy which they end up tasting still just great.
