Orange Chicken With Broccoli

- 3 lbs chicken, cut up
- 2 tablespoons flour
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground cinnamon
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 cup rice
- 2 cups orange juice
- 1⁄4 teaspoon hot pepper sauce
- 6 carrots, peeled and sliced
- 4 cups broccoli florets
- 1 orange, sliced
directions
- Remove fat and skin from chicken.
- Combine flour, salt and cinnamon. Dredge chicken in seasoned flour.
- Hea oil over medium high until hot. Add chicken and cook, turning, until well browned all over, 5-7 minutes.
- Cover and cook chicken over medium high for about 10 minutes. Remove to a plate. Drain fat from pan.
- Add onion and rice to pan and cook, stirring, 3 minutes.
- Add orange juice, hot sauce and carrots. Heat to boiling.
- Return chcien to pan, placing on top of rice mixture. Return heat to medium-low, cover and simmer 20 minutes.
- Add broccoli and orange slices. Cover and cook 10-15 minutes longer until rice and broccoli are tender.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
