ingredients

2 cups flour
¹⁄₂ teaspoon salt
3 teaspoons baking powder
¹⁄₂ teaspoon cinnamon
¹⁄₂ cup unbleached cane sugar
1 teaspoon orange zest
³⁄₄ cup orange juice
2 eggs, beaten
1 teaspoon vanilla
¹⁄₄ cup oil
Topping
¹⁄₂ cup brown sugar
1 tablespoon orange zest
1 teaspoon ground cinnamon
2 tablespoons butter, melted
Icing
¹⁄₂ cup powdered sugar
1 tablespoon orange juice

directions

Sift first five ingredients in bowl. Stir in orange peel,.
orange juice, eggs and vanilla. Add oil. Mix until moist.
Pour into greased/floured 8 by 8 pan. Mix topping and place.
on top of dough. Bake in 400 degree oven for 25-30 minutes-.
or until toothpick inserted in middle of bread comes out.
clean. Drizzle icing over bread when cooled 5 minutes.

This ends up more of a coffee cake than a bread so I served this as a dessert for our Easter Sunday. The flavors are intense and lovely overall. The orange glaze was a nice treat on top of the cake. Made for the Pick-A-Chef Event Spring 2009.
