  1. Place sweet potatoes in a 2-quart casserole dish, cover, and cook in microwave on high for 10-12 minutes, until potatoes are tender. Remove and set aside to cool slightly.
  2. Combine butter, brown sugar, orange juice, orange zest, apricot preserves, salt and pepper in a small microwave bowl and cook on high for 3 minutes, stirring each minute.
  3. Add orange mixture to the potatoes and toss lightly. Microwave until heated through. Baste with sauce twice during final heating. Garnish with the walnuts sprinkled on top.
