  • Heat oil in a large skillet and cook almonds until lightly toasted.
  • Add onions and green pepper; cook until soft.
  • Add orange juice, cinnamon sticks, cloves, and spices and bring to a boil Quickly stir in couscous and raisins, then cover and turn off heat.
  • Let stand 5 minutes, or until liquid is absorbed completely.
  • Fluff with a fork before serving.
  • Sprinkle each portion with the green onions.

I scaled this back for 3 serves and I did substitute sultanas for the raisins and red capsicum for the green peppers but otherwise proceeded and made as per recipe but when I added the couscous and sultanas to to the liquid mix there was not enough liquid so had to add nearly a cup of hot/boiling water (would sub this with vegie stock in the future). Also I think I would dry roast the almonds (in an oil free pan) and then add them with the couscous and the raisins, giving a more even colour to the almond (oh I used blanched slivered almonds). Thank you AZPARZYCH for a lovely couscous recipe, made for Everyday A Holiday.
     
  2. I think this recipe has great potential. My dish ended up very dry, but it is possible the problem was using pearled couscous. I used 12 oz rather than two cups, but there still wasn't enough liquid for the result to be fluffy. I also added some orange zest to up the orange flavor. Next time I would double the tumeric too. Thank you for sharing the recipe. I am glad I tried it! ZWT9
     
  3. What a delightful recipe! I don't care for onions so skipped the garnish, otherwise made just as directed and wouldn't change a thing. Loved the combination of flavors here; the heat from the cayenne was great with the orange and other spices. Enjoyed the addition of raisins and almonds too. Just loved this - thanks for sharing the recipe!
     
  4. Made this as per the recipe, but with one slight exception ~ I doubled the amount of raisins & was very happy with the results! This recipe makes for a very, very tasty side dish, & the next time I make it (which is in another 2 weeks) we'll have company here to enjoy it along with us! Thanks for sharing the recipe!   5. Made as a Family Pick for ZWT6, I really enjoyed making & eating this easy-fix & tasty recipe. I noticed (while setting up for the pic) that I had no green onions, so I opted to scatter orange zest atop ea portion. I halved this recipe & expected 2 servings, but got 3 very generous servings. That said & IMO, this recipe will serve 6 generously, a chg that will improve the nutritional data. I am sure this works well w/many entrees but I see chicken as ideal for it. Thx for sharing this recipe w/us.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
