ingredients
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup applesauce
- 3 tablespoons safflower oil
- 1⁄3 cup soymilk
- 1⁄4 cup orange juice
- 1⁄3 cup maple syrup
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 1⁄2 tablespoons ground flax seeds
- 2 tablespoons poppy seeds
- 1⁄2 teaspoon cinnamon
- 2 teaspoons orange zest
directions
- preheat oven to 375 F.
- Mix dry ingredients.
- Mix flax and orange juice, then add the other wet ingredients.
- mix both wet and dry together.
- spoon into muffin pan lined with cupcake liners or safflower oil.
- bake 15-25 minutes, until toothpick in center comes out clean.

Sorry, I am not leaving any stars, since there seems to be something missing in the recipe. There is too much liquid for the amount of flour. Batter was more like pancake batter. Liquid is almost double the dry ingredients and that ratio should be reversed, I think. Also, when the first instruction is to mix all dry ingredients, all dry ingredients should be listed in order. The ingredient list in this is very mixed up. What I ended up with was very flat, soft "cakes". They tasted fine, but the texture was not good. Again, sorry, I hate leaving negative reviews, but I made this for the Spring PAC game and had to review it. :(
