Orange Prune Muffins

"Although I haven't tried this recipe yet, I think it looks good and healthy. It has very little refined sugar and lots of oats. I found it on the back of a Great Value (Wal-Mart) Prunes box. I plan to make it soon for my prune-loving daughter. Since I haven't made it yet, the prep time is a guess."

  • Mix prunes and banana in food processor until combined well. Stir in milk, orange juice, egg and orange peel.
  • In a separate bowl, mix oat bran,oats, flour, brown sugar, baking powder and cinnamon. Make a well in the center of dry ingredients and pour in prune/banana mixture. Stir until combined.
  • Fill 12 paper-lined muffin tins 2/3 full and bake at 400 degrees F for about 20 minutes or until centers spring back when pressed.

  1. Good with some tweaking... I used the zest of 1 small orange and its juice that I mixed with the milk. I added to that mix the wheat bran (did not have oat) and rolled oat. Let stand while I prepare the rest. I always have Prune purée so I used 2/3 of cup and added 1/4 of cup of olive oil. I mixed fruits, oil egg and sugar as cakes are usually done. Finished with the oat mixture and then, flour and baking powder. I added 1/2 cup of raisins and 1/2 cup walnut. DO NOT over mix. Delicious! Perfect for toddlers!
     
  2. These were very interesting. I liked them, but mom did not. I only used half the orange zest, but the orange flavor was quite powerful. The next day the flavor kind of softened though, and I thought they were much better.
