  • Mix flour and spices in small bowl.
  • In large bolw,mix sugars,eggs and oil.
  • Add pumpkin, orange juice and zest,beat until well blended.
  • Stir in dry ingredients just until moistened.
  • Fill paper lined muffin cups 2/3 full.
  • Sprinkle each muffin with 1 tsp nuts.
  • Bake 20-23 minutes at 350 degrees.
  • Cool.

  1. Used fresh pumpkin for these delicious muffins. Orange was refreshing but not so strong as to over power other flavours. Good balance of flavours.
     
  2. I chose this recipe to use up some homemade squash puree and fresh orange juice that I had left over. I increased the spices, as recommended by other reviewers. And, I left out the granulated sugar. The only sugar I added was 1/2 cup brown sugar (packed). And, I thought they were still too sweet. Next time I will put in less than the 1/2 cup brown sugar. I did top the muffins with chopped nuts, combined with 1 Tb granulated sugar and some cinnamon. The muffins have a nice combination of flavors and nice texture. The recipe just has way too much sugar in it. Also, it says it serves 18, but this makes 12 muffins, so I would say it makes 12 servings.
     
  3. This was a really good recipe. I read other reviews about the muffins being very moist. My batter was thin, I added flour to the 1 -3/4 cup, a little at a time, probably close to another cup. I added more pumpkin pie pie spice. I'll make these again.
     
  4. This is the second time I will be making these wonderful muffins. I use applesauce instead of the vegetable oil, and increase the spices. I love them!
     
  5. These were very moist, perhaps a bit too moist. Good flavor, but I did not really taste the orange.
