Orange Rice

"Very yummy, easy and fast. This rice is great with barbequed chicken, or pork chops, or just about anything. Very mildly orange, and fluffy! Even my husband likes it! Adapted from Southern Living 1981. Prep time includes grating rind and squeezing juice."

  • 2 cups water
  • 12 cup orange juice
  • 1 tablespoon grated orange rind
  • 1 teaspoon salt
  • 1 cup uncooked white rice
  • 2 teaspoons orange juice

directions

  • Combine water, 1/2 cup juice, orange rind and salt in a saucpan.
  • Bring to a boil.
  • Add rice.
  • Reduce heat and simmer, covered, for 20 minutes or until all liquid is absorbed.
  • Drizzle 2 teaspoons juice over rice, stir well before serving.

  3. This was great rice, made it exactly as written. Served it with a balsamic chicken dish and it worked so well. Next time, I think I'll saute some shallots or onions in butter and toss them in during the last few minutes of simmering. Thank you for posting this recipe, I'll be having this often.
     
  4. This is a great recipe. Made it with pork in cherry sauce. I added some chopped green onions that I had on hand and it blended with the citrus flavor beautifully. I'll definitely be making this again. Thanks!

<p>I live in TN with a husband, 9 year old, 6 year old, and our two dogs. I'm a busy mom who loves to cook for family and friends. We have two boys, and they are the light of my life! My husband is a restaurant manager. We actually met while working together at Bob Evans in another city. He was one cute grill cook!! Now he is one cute manager, and I am so proud of him! He currently works for El Chico, and he is very happy there. <br />I am a stay at home mom who sometimes does temp work, which is a big change from corporate America. We'll see how that goes. Now that I have some more time, I plan to get back to the kind of cooking I used to do. You know...with pots and pans instead of a take out menu. I love to crochet, garden and hike with the family. Thanks in advance for any reviews you do of my recipes. :)</p>
