ingredients

1 navel orange
4 eggs, beaten
1 tablespoon scallion, chopped
1 tablespoon parsley, chopped
2 tablespoons olive oil
salt

directions

peel orange, separte into pieces.
heated, oiled pan, add orange pieces.
when orange oftens, add the seasoned and beatneed eggs.
serve with parsley on top.
