  1. Coarsely chop lettuce.
  2. Squeeze a little lemon juice over apples and pears and toss with greens.
  3. Combine cider, vinegar and sugar in a bowl and whisk in oil in a slow stream.
  4. Pour dressing over salad, season with salt and pepper, toss to combine and coat evenly.
  5. Serve salad with a garnish of sliced sharp cheddar cheese.
