Interesting choice to use confectioner's sugar. What made you choose that? I was thinking of using coconut oil (in place of the canola oil here &/or the palm oil in the original Bisquick, which has both). Has anyone ever tried that? Also, Bisquick has cornstarch in it. I know confectioners' sugar has some, but I'm not sure it would be enough to equal what is in Bisquick?

Really liked this mix. I used it for quick easy pizza dough. Didn't feel like making up my usual yeasty dough and wanted something different. (One 12 inch pizza: 1.5 cups of this mix and 1/3 cup hot water mixed really well and rolled out to make thin crust pizza ,was awesome. No pre-bake needed. Flattened out, topped and baked for 15 minutes, cooled on a rack. Perfect. =) Thanks for this recipe! it is a keeper!

Loved it! I have thrown so many boxes of baking mix away because I don't use that much before it expires. This way I can make what I need plus a bit more for the next time. Great mix.. tastes and cooks up just like Bisquick. Ingredients are standard staples in any pantry so save yourself a bunch of money cooks and go this route instead of giving your money away!
