  • MIX 1/2 cup of the sugar, flour and salt in top of double boiler.
  • Blend in 3 egg yolks and milk.
  • Cook, uncovered, over boiling water 10 to 12 minutes or until thickened, stirring constantly.
  • Remove from heat; stir in vanilla.
  • RESERVE 10 of the wafers for garnish.
  • Spread small amount of custard on bottom of 1-1/2-quart baking dish; cover with layers of 1/3 each of the remaining wafers and sliced bananas.
  • Pour about 1/3 of the remaining custard over bananas.
  • Continue to layer wafers, bananas and custard to make a total of 3 layers of each, ending with custard.
  • BEAT egg whites on high speed of electric mixer until soft peaks form.
  • Gradually add remaining 1/4 cup sugar, beating until stiff but not dry.
  • Spoon over custard; spread evenly to cover entire surface of custard and sealing well to edge.
  • BAKE at 350°F for 15 to 20 minutes or until lightly browned.
  • Cool slightly or refrigerate several hours until chilled.
  • Top with reserved wafers just before serving.
  • Garnish with additional banana slices, if desired.

  1. How long for it to thicken on the stove? I’ve been stirring constantly for about 15 minutes :( and to what consistency
     
  2. What if I don't want to use marang do I still bake it for 15 to 20 minutes
     
  3. I have a very old recipe which is this one but at that time it was called /carnation banana wafer pudding. Does everyone use regular milk? Haven't made this in a long time. My family is asking for it for Thanksgiving.
     
  4. I would like to double the banana pudding recipe but I only have 5 eggs, not 6. How can I still make it?

  2. For 9x13 pan, definitely double the custard recipe. I bought 2 boxes of wafers and used most of them and also used more bananas. Soooo much better than boxed pudding.
     
  3. This is the recipe my Granny and Momma used. I've always used it. I have tried others, but this is by far the best.
     
  4. I have made this recipe so many times over the years and it's frequently fought over. It's pretty much the best thing ever.
