Orzo Salad

"Packed with flavor! All this salad needs is some good crusty bread to make it a complete summer meal. Also good without the tuna but then use less lemon juice. Fridge time not included."

  • Cook orzo al dente according to packet directions.
  • Drain and rinse with cold water, drain again then transfer to a bowl.
  • Add all the salad ingredients except for the tuna and eggs.
  • In a jar mix all the dressing ingredients and shake well, pour half of the dressing over the salad and mix together.
  • Cover and place in the fridge so the flavors can develop, for at least one hour.
  • Before serving add the rest of the dressing and the tuna, toss and garnish with the eggs.
  • Alternatively serve the rest of the dressing in a small jug on the side.

  1. We loved this salad! Great in the summer - very light and refreshing on a hot day. Loved the tuna and egg in the salad as well - everything in one dish! I did add fresh basil, shredded carrots, and grated parmesan cheese.
     
  2. This salad was absolutely delicious. I had cut the recipe in half since there was only 2 of us and it still made for a lot of salad. I went with the parsley and fresh basil mix and I thought it added to the flavor very nicely. I chose the green onions over the red. I had mixed some of the dressing in with the tuna and placed the tuna in the middle of the salad instead of mixing it all together and went with the eggs on the side. The flavors were really yummy and it all went so well together and so filling. Will definitely be making this again. Thanks for sharing your recipe Pets'R'us.
     
  3. My whole family loved this recipe. My daughter, who doesn't like garbanzos, carefully picked them out, and was crazy about the result. I think that any beans would be fine - I will try white beans next time. I left out the olives - didn't have any. Still delicious.
     
  4. this is a great lunch that transports easily for brown baggers. i prepared the orzo and eggs the night before and mixed the salad in the morning. i love the ingredients together, especially the tuna feta and olives. i even threw in some anchovies. very tasty!
     
  5. What a delightful salad to go with our chicken tonight. I did not use the tuna or basil - but believe the basil would have been good. I will also add some more tomato into the left overs as I really liked that flavor and my plants are producing plenty of those little cherry tomatoes. The olives and lemon juice gave it a definate tang. Don't leave out the hard boiled eggs - they were very good with it.

Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
