Orzo Salad With Feta and Cherry Tomatoes

  • Fill a 4 qt pot three-fourths full with salted water and bring to boil for orzo.
  • In a small heavy skillet, heat 1/2 TBS olive oil over moderate heat until hot but not smoking and saute pine nuts, stirring frequently until golden, about 2 minutes; transfer nuts to paper towel to drain and cool.
  • In a large bowl, whisk together garlic, parsley, vinegar, salt and pepper; drizzle in remaining TBS olive oil, whisking all the while.
  • Add tomatoes and feta to the dressing, tossing to combine.
  • Cook orzo in boiling water until al dente; drain and rinse until just warm, then drain completely.
  • Toss orzo and pine nuts with dressing, coating thoroughly, then serve.

  1. This salad is packed with flavour. I did add some green onion and left out the nuts, oil and vinegar. I added the hot orzo to the rest of the ingredients and the feta became nice and soft. It was so good, there was none left after lunch. Thanks for the recipe.

  3. My husband and I really enjoyed this dish. We acutally used it as a main dish instead of a side. I used balsamic vinegar instead of red wine vinegar just because we love balsamic on anything. The only thing I will do different is use less parsely just because I don't like the taste. My husband thought it was fine as it's written. This is a keeper. Thanx for posting !
     
  4. Very delicious salad. I added red chili flakes and found it to be quite tasty. I would recommend 6-7 ounces of orzo instead though, otherwise the other ingredients seem too sparse.

  2. Wow! What a great side dish. But.. I have to admit I messed up and bought blue cheese instead of Feta grrrr so, I decided to use that instead. Yum! I'm sure with the Feta its just as delicious. We really loved this one. Thanks!

I am an American married to a Belgian, and have lived in Belgium since December 1999. Cooking is my major hobby. I'm also an avid reader, but I have difficulty finding the time. I love to travel. I'm absolutely in love with the Bay of Naples and Sorrento coast areas of Italy, which my husband and I recently re-visited on a trip that included Rome, Puglia, Umbria and Marche. I'm still looking forward to Ireland, Spain, Portugal, the Czech Republic . . . the list is too long ! One of the bonuses of travel is getting to taste the local cuisine, and afterward trying to figure out how to duplicate it at home. I think cooking is one of the nicest things a person can do for someone they love (including themself!) I had to submit a picture with me and my cat, Sophie, as she insists on sitting in my lap when I'm sitting at the computer. If you are wondering what all that stuff hanging on the wall behind us in the photo is, it is just a small part of my husband's military medal collection. He was appalled by my posting this picture-- Our study is the messiest room in our house (thank god!)
