Our Very Favorite Guacamole

"I don't remember where I found this but I do have a name: Elizabeth Powell. Also, I have renamed the recipe as the original title was simply Guacamole. I use canned chiles because I can't get fresh ones. Also I use mild green chiles as we don't like alot of heat. Substitute one tablespoon of chopped parsley and 1/2 teaspoon of ground coriander if fresh coriander is not available."

  • Peel avocados, cut them in halves and remove pits.
  • Toss with lemon juice in a ceramic bowl.
  • Mash with a fork until smooth.
  • Add remaining ingredients, blend well and adjust seasoning to taste.

<p>We are full time RV'ers &amp; live in our 5th Wheel Montana. We have been on the road for 3 years and are currently in Arizona.&nbsp; Our newest hobby is quad riding in AZ. <img title=Cool src=/tiny_mce/plugins/emotions/img/smiley-cool.gif border=0 alt=Cool />&nbsp; So I'm always on the look out for slow cooker recipes.<br />I don't think I could pick just one cookbook from all the ones I have. I do like to experiment with cooking and often embellish on recipes that I find. My big peeve is people who chew with their mouths open &amp; smack their lips.</p>
