  • Coat a large baking sheet with cooking spray.
  • In a resealable plastic bag or shallow dish, combine oats, garlic powder, onion powder, mustard powder, paprika, oregano, thyme, salt, and pepper. Mix well and set aside.
  • Brush each chicken breast with Dijon mustard.
  • Add chicken to oat mixture with tongs and turn to coat both sides.
  • Transfer chicken to prepared baking sheet and spray with cooking spray.
  • Bake 30 minutes, At 400 degrees, until golden brown and cooked through.

  1. A very flavorful low-fat recipe! The coating wasn't as moist as "traditional" coating, but we all enjoyed it. Even the kids! The chicken itself was very moist though. I took the advice of the previous reviewer and put the oats and spices in my mini chopper/food processor. I think that was an excellent idea. A few of us used additional Dijon mustard as we ate it, but some ate it "as is". I served it with Recipe #320739 and long grain wild rice. It was like a fancy restaurant meal without the price tag or calorie overload!! Thanks for sharing!
     
  2. Great recipe. The only change I would make is whirl the oats in the blender to make them a little smaller.
