Directions

  1. Spray a baking sheet generously with cooking spray,.
  2. Mix the bread crumbs, parmesan cheese, basil, and garlic salt together.
  3. Peel eggplant and slice about 1/4" thick.
  4. Dip in beaten egg whites and then in the crumb mixture.
  5. Put on baking sheet.
  6. Bake in a 400 degree oven for about 12-15 minutes or till done.
