  • Preheat oven to 500F degrees.
  • Spray cookie sheet with non-stick spray- set aside.
  • Combine corn flake crumbs, cheese, red pepper, salt& black pepper in a shallow dish.
  • Dip fish fillets in beaten egg, then dredge in crumb mixture.
  • Place coated fillets on prepared baking sheet.
  • Bake 8 minutes or until fish flakes easily with a fork.

  1. A little too spicy for my taste. Next time I will probably eliminate the red pepper. It was somewhat like fried fish but a little dry.

I have been a Central Illinois resident all my life. My hobbies include fishing with my husband, reading, counted cross stitch, and of course, cooking (especially baking)! I currently work in an office, behind a desk, pushing paper. My dream would be to open my own bakery.
