Oven Potato Wedges (Oamc)

"When potatoes are on sale, here is a good thing to do with them! :) Based on a recipe I found online. Cooking time does not include freezing time."

  • 6 -8 medium russet potatoes (about 3 pounds)
  • 2 tablespoons olive oil
  • 2 tablespoons seasoning (whatever you like on fries)

directions

  • Preheat oven to 400 degrees Fahrenheit.
  • Scrub potatoes.
  • Cut each potato into 6 to 8 long wedges.
  • Toss wedges in oil, just enough to coat.
  • Sprinkle seasoning on top and toss to coat.
  • Lay out on an ungreased baking sheet.
  • Bake for 30 minutes.
  • Take out of oven and allow to cool.
  • Leave on baking sheet and put into freezer to flash freeze.
  • TO FREEZE: After an hour or two (depending on your freezer), check and make sure wedges are frozen. Place frozen wedges in labeled freezer bags and return to freezer.
  • TO SERVE: Pull out however many wedges you want to serve; place on a greased or nonstick baking sheet. Bake in a 450 degree Fahrenheit oven for 30 to 45 minutes (depending on the size of your wedges). These can also be deep fried.

  1. Sounds like a good recipe I will try one day although when I make fries I have learned that soaking the uncooked, sliced potatos in a bowel with HOT tap water helps remove the starch so when they bake they get crispier on the oustide and soft and chewy on the inside.
     
  2. As I was scrubbing potatoes for dinner tonight (baked potatoes), I thought I should go ahead and try this recipe with a few extras. My hubby, son, and I all tried one or two of these before I froze them -- SO yummy! I froze the rest so that DH and the kiddo have a fast, home-made side to eat for dinner on nights when I work late. I seasoned with Old Bay and they're perfect! Thanks so much for sharing!

  4. Thank you for posting. Did a small batch using your recipe in early spring; worked out very well. Now I have my 3rd batch in the oven now from this year's harvest. Three gallons worth of fingerlings and mid size taters! Did not season, will do when cook so I can use what ever seasonings, but did write on all the zip bags the final cooking instructions. This is a keeper for sure and well worth sharing with others.<br/>Thanks again!
     
  5. I tried to make twice baked potatoes but couldn't get the potato soft enough to scoop out the middle. Since I had already cut them down the middle and put them in the oven a few more times to get them soft I just couldn't get it. I used a very hard potato so I know that is mu issue. ANYWAYS I went to this recipe to see if I could salvage my big batch of potatoes and am so happy I did. These turned out great and happy I didn't have to waste the 12 potatoes I had already cooked up. I was able to make 3 baking sheets full and will do this one again.

I reserve the right to bump up or down a half star a recipe based on the actual recipe and how easy it was, etc. etc. I have to admit, it's been a couple of years since I updated this text and in the meantime, my picky picky DD has flowered into a girl who enjoys California rolls, will give almost everything a try, and in general much less picky than the average 7 year old in this area. DS, at 2 and a half, asks for salad for lunch and then demolishes it. He's a weirdo. :) We try to be very honest and very descriptive with our reviews. And I fully appreciate the same from people reviewing my recipes. Not every family will like every recipe, and sometimes what you didn't like about a recipe, another family will love! :) I also try to be as nice and polite as possible in my reviews. I don't believe there is any reason not to. The only thing that really upsets me enough to be mean is when a poorly written recipe forces me to have to clean my kitchen. ***** - "Scout is not allowed to make this very often because it is highly addictive and will be inhaled on sight!" Dump Cakes, Sweet Salsa Chicken and Wasabi Peanuts are in this category. **** - "This is wonderful and we want to see it again fairly often, a new family favorite." *** - "This is good.
