  • Preheat oven to 325 degrees.
  • Place the sweet potatoes in a shallow roasting pan that has been sprayed with cooking spray.
  • Drizzle with the oil, sprinkle with salt and pepper; toss well to coat.
  • Place in preheated oven and bake for 30 minutes.
  • Add the onions; stirring well.
  • Bake an additional 30 minutes; remove from oven.
  • Preheat broiler.
  • Drizzle the sweet potato mixture with melted butter; stirring to coat.
  • Broil 10 minutes or until browned.

  2. I have only had sweet potatoes a handful of times, and they were almost always sweet. We are trying to eat healthier and since sweet potatoes are better for you than white potatoes, I decided to try this recipe. I am glad I did! I used 2 large sweet potatoes, so we probably had a little less than 7 cups, and I used 2 tbsp of light margarine rather than 1 tbsp butter, but otherwise followed the recipe. The potatoes were super tender and the onion had just a tiny bit of snap left (which I like). We will definitely be making this again. Thanks for a great recipe that makes eating a little healthier easier.
     
  3. Great potatoes!! I cut the recipe down to 2 servings and it was the perfect amount for my dinner and leftovers for lunch (no one else eats sweet potatoes in the family). I used a shallot rather than onion and just drizzled the butter on top, didn't broil them. Will be making these again! They were sweet naturally without adding brown sugar and they were cooked perfectly in 1 hour. Made for AUS/NZ Recipe Swap #64.
     
  4. actually came out too soft but still good - I drizzled with a small container of yogurt + lime juice :)
     
  5. Thanks for this recipe I have a 1yr old son who is allergic to so many things it is difficult to find simple recipes that don't rob the food of its natural vitamins and taste great I ommitted the butter and onion salt , pepper they were still great

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
