Overnight Coffee Cake Swirl

  • Grease and flour 9-inch round or 8-inch square pan.
  • In small bowl, combine all cake ingredients.
  • Blend at low speed until moistened; beat 2 minutes at medium speed.
  • Pour batter into greased and floured pan.
  • In small bowl, combine all topping ingredients; blend well.
  • Sprinkle over batter.
  • Cover; refrigerate overnight.
  • Heat oven to 350°F
  • Uncover coffee cake.
  • Bake for 25 to 35 minutes or until toothpick inserted in center comes out clean.
  • Serve warm.
  • *Tip -- to substitute for buttermilk, use 1 1/2 tsps vinegar or lemon juice plus milk to make 1/2 cup.

  2. I don't understand the science behind it but this cake baked up beautifully and was moist. I added 1/2 teaspoon vanilla extract, used coconut oil for shortening and baked the cake in a tube pan. Perfect with my morning coffee! I love pecans and this cake hit the spot! Took closer to bake-about 40 minutes. Prepared for the FYC tag game.
     
  3. Made this to take to the hospital for my fellow volunteers, This was a very nice dessert for us. For the nuts I used chopped pecans, and evrybody, along with myself enjoyed this wonderful coffee cake, as first come first served, it was gone in no time, just glad I had a portion. A great afternoon or for anytime dessert for guest. Made for PRMR.
     
  4. This is a nice little coffee cake but I did think it was a little dry. I didn't let it sit overnight, just mixed it up and baked it. Perhaps that was the problem. I also added some cinnamon to the topping and vanilla to the batter. Made for 123HITS cooking tag game.
     
  5. I really enjoyed this! Simple, light textured and very tasty. I didn't refrigerate it but mixed in the morning and baked right away. It's so very simple, mixing it together in the morning took less then 10 minutes. I added a little cinnamon to the topping and vanilla to the cake. YUM! Made for PRMRT

I enjoy hiking, snowshoeing, have done some rock climbing but age is creeping up on my poor old bones. Anything to do with the outdoors I enjoy, so why do I live in rainy Washington state? We have 2 wonderful children, both grown. My son lives in LA and my daughter and her husband recently moved back in the area with their little boy...our grandson... who just turned?5 years old. We have a granddaughter who lives close by...she just turned 23 this year. She's a sweetheart.? Life is good when you have a son and a?daughter and they?gift?you with a granddaughter and grandson. :)??</p>
