- 1⁄2 cup rolled oats (not quick)
- 1 cup unsweetened almond milk
- 2 tablespoons chia seeds
- 2 tablespoons dried cranberries
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon vanilla
directions
- Mix together and place in fridge for at least 3 hours or overnight. 1 serving (pretty big though - I have been eating 1/2 at a time).

I am new to the world of Gluten-free, with a boyfriend and his son who both have celiac. While there are lots of products available, pasta, cookies, etc. - the biggest thing that they miss out on is stuff like bread, rolls and pizza dough. I thought I would start trying out some of the gluten-free recipes and see how we do. Wish me luck!
