  • Blend together mayonnaise, lemon juice, salt, yogurt and honey.
  • Pour dressing over carrots and raisins and mix thoroughly.
  • Chill for 30 minutes before serving.

  1. What a simple and tasty salad! I love carrots and raisins both and the combination makes for a wonderful salad. I enjoyed the tartness of the dressing from the lemons and think it further enhanced a delicious salad/side dish. Made for ZWT4.
     
  2. This is a great fresh tasting carrot salad with a light tasting dressing. I liked the addition of the little bit of honey to counteract the tartness of the lemon juice and yogurt. I really liked the lemon flavour here. Made for ZWT 4
     
  3. Very good. I never thought sweet carrots needed much help but the combo of ingredients makes this refreshing and light. I used more carrots than the recipe calls for, yellow raisins and all mayo (no yogurt, as I do not have this in the fridge) and all other ingredients as suggested. I would suggest making it ahead of time as it only gets better with age. Two days later and it is still awesome if not better! Thanks for posting & sharing your mom's recipe.
     
  4. Yummy. I am of a PA Dutch background and I love carrot salad so I had to give this a try. I used far free mayo to go with the nonfat yogurt and it worked well and tasted really good. Made for ZWT4.
     
  5. I really liked that this wasn't overwhelming sweet. The tartness in the dressing melded well with the carrots and raisins. I do think I might cut back a tad on the amount of the dressing next time or add an extra carrot. I had more than enough to fully coat everything. Made for ZWT4.

I grew up in PA Dutch country and now live in the suburbs of D.C. I am a homemaker and love to play with my kids who are now 9 and 6. My favorite room in the house is the kitchen. My children used to be explorative eaters... anything went. They are becoming more discriminating ... OK, picky ... so my newest challenge is finding interesting dishes that will meet their tastes. This usually means not admitting to specific ingredients or making them unnoticeable (such as onions). I'm loving the ability to practically pulverize my onions quickly with my food chopper. I love experimenting with different culinary traditions. When I find the time to play in the kitchen uninterrupted, dinner can be quite an adventure at our house. My ultimate month off would be to spend a month travelling around the world as a food critic. - send me back to St-Jean-De-Luz in SW France for Chipirones (a fabulous squid dish)along the bay!
