- 1 cup almond flour
- 1⁄4 teaspoon sea salt
- 1⁄2 teaspoon baking soda
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1⁄2 teaspoon clove
- 1⁄2 cup canned pumpkin
- 2 tablespoons honey
- 1⁄4 teaspoon stevia
- 3 large eggs
- 1⁄2 cup chocolate chips (optional)
directions
- In a food processor combine almond flour, salt, baking soda and spices.
- Add pumpkin, honey, stevia and eggs and pulse for 2 minutes.
- Scoop batter into a mini loaf pan.
- Bake at 350° for 35-45 minutes.
- Cool for 1 hour.
- Serve.

Many of my favorite foods are down-home Southern comfort food like my grandmother and mother made, but I also live in an ethnically diverse area and have been able to learn a lot about different styles of cooking. I especially like Asian, Mediterranean and Indian food.
