  • 4 eggs
  • 1 banana, ripe
  • 12 teaspoon baking soda
  • 1 pinch salt
  • 14 cup coconut oil
  • 1 -2 tablespoon spices (italian seasoning, minced onions, whatever you like)
  • 14 cup coconut flour

  • Preheat oven to 350 F.
  • Combine everything (except coconut flour) in blender and incorporate until well blended.
  • With blender running on low, slowly add coconut flour to form a batter.
  • Pour (may need spatula) into a 9x9in, parchment lined baking pan. Sprinkle additional spices on top.
  • Bake for 30 minutes.
  • Slice into four squares then slice each square lengthwise to make sandwich slices.
  • Can keep in freezer - so make ahead for the whole week! :).
