Palm Springs Chile Con Queso Casserole

- 1⁄2 tablespoon unsalted butter, softened
- 4 (4 ounce) cans chopped green chilies
- 1 1⁄2 cups cooked chicken, shredded
- 2 cups grated sharp white cheddar cheese, about 8 ounces
- 2 cups grated monterey jack cheese, about 8 ounces
- 8 eggs
- 1 cup milk
- 1⁄2 teaspoon ground cumin
directions
- Preheat oven to 350 degrees. Butter a 9x13 baking dish. Spread the chiles in the dish. Scatter the chicken over the chiles. Cover with the cheeses.
- Beat the eggs and milk together. Beat in the cumin. Pour this mixture over the cheese. Bake 30-40 minutes, until lightly browned on top.
- Allow to rest 10 minutes, then cut into squares and serve.
